又一道 簡單 健康 的料理

上星期天照例到超市採購一周食材 

本來是想做  香煎鱸魚 Pan-fried sea bass     ( 現在都先規劃好一周菜單 然後才到超市採購所需食材 )

到超市時已近下午兩點        ( 英國的超市 周日通常營業到四點就關門了 )

生鮮櫃檯只剩下一條 病懨懨的鱸魚 孤伶伶地躺在碎冰上

一來賣相不佳     二來一條可能不夠作為兩個人的 主餐

於是 我們買了 鱈魚

這是今晚做的晚餐 -- 薑燒蜂蜜雞肉 

簡單易做  又好吃

難易度:      (以五顆星計算)

 

Stir-Fried Chicken Fillets with Honey and Ginger

serves for 4

 

Ingredients:

800g chicken thigh fillets

2 tablespoons vegetable oil

1 tablespoon light soy sauce

 

Marinade

¼ cup (clear) honey 

2ts light soy sauce   生抽醬油

2ts shao hsing wine  紹興酒

2ts diced ginger  薑

1ts oyster sauce  蠔油

2ts dark soy sauce  老抽醬油

2ts five-spice powder  五香粉

½ts sesame oil   香油

 

(1) Combine chicken with marinade ingredients in a large bowl and leave to marinate in the fridge overnight.

(2) Heat oil in a hot wok. Add half the marinated chicken with the marinade and stir fry for 1 minute. Remove from wok and set aside.

(3) Add remaining chicken and stir-fry for 1 minute.

(4) Return reserved chicken to the wok with soy sauce and stir fry for a further 2 minutes or until chicken is just cooked through and slightly caramelised.

 

小小變化:

** I added some fine beans to make it healthier.   放了豆子

** I put a bit of finely diced chilli in just to give it a kick.   還切了一些些辣椒來加味

** I find Kylie’s cooking different from what I used to know.  She often fries the meat in two goes – fry half first and put aside, and then cook the other half.
